Made from white or red grapes (from uncoloured pulp). In this second case, the must is separated from the skin immediately so that it does not become coloured. In general, fermentation is carried out with must, separated from skins, pips, stems, etc. And, although it is not common to age it, there are white wines that are aged.
Among the white wines there is the so-called green wine, a young Portuguese wine with little maturation, or the grey wine, obtained from red grapes. Also considered a white wine is vin jaune (yellow wine), made in the French region of Jura, with grapes of the savagnin variety harvested late and with high sugar content.
